Hello! I’m Erica, and my goal in creating this website is to give a helping hand in navigating the world of gluten- and dairy-free cooking. Changing the way you cook, shop, and eat can be very scary and difficult at first; I remember it well. Back in 2002, I spent two months eating not much more than grilled chicken and spinach salads because I didn’t know what else to eat. Since then, I’ve discovered so many wonderful ways to feed myself and my family within these limits. Honestly, I don’t think I’d go back to my old diet if I had the choice. Food is so much more adventurous, delicious and interesting than it was before!
With some curiosity, experimentation, and a lot of label reading, you will discover that it’s not difficult to create healthy, safe, and tasty food. Don’t be afraid to fail. Try new foods, new techniques, new combinations. Don’t make the mistake of expecting things to taste like their gluten- and dairy-full counterparts. Do expect to find new and wonderful flavors that you didn’t realize existed before.
Perhaps most importantly, don’t feel like you’re alone in this. There are a lot of people who’ve had to make these same adjustments to not only their diets, but their lives. I want to make that change just a tiny bit easier by sharing the foods and recipes that work for me and my family.
